- 1 cup cottage cheese

Instructions
- In a large mixing bowl, whisk together the flour and baking powder.
- In another bowl, combine cottage cheese, eggs, milk, maple syrup, and vanilla extract. Whisk until smooth and well combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix; a few lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form and edges look set.
- Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve warm with additional maple syrup, fresh fruit, or your favorite toppings.
Notes
For extra flavor, try adding a pinch of cinnamon to the batter.
