Description

This Cowboy Chicken features juicy chicken cutlets topped with smoky flavors and a delicious array of ingredients, making it perfect for an easy weeknight dinner. Enjoy a blend of black beans, corn, and zesty lime that will tantalize your taste buds!


Ingredients

  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn, drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro, jalapeños, and avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and position the rack 6 inches below the broiler.
  2. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Reserve 1½ teaspoons for the cowboy caviar.
  3. Season both sides of the chicken with the seasoning mix.
  4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken in batches if needed, cooking for 3-4 minutes on each side until fully cooked (165℉). Transfer to a plate.
  5. Lower the heat to medium and add the remaining tablespoon of oil to the skillet. Add the diced onion and cook until tender, about 4-5 minutes.
  6. Incorporate black beans, corn, diced tomatoes, reserved seasoning mix, and lime juice into the skillet. Stir and cook for 4-5 minutes until heated through.
  7. Return the chicken to the skillet. Brush with barbecue sauce and top with shredded cheese.
  8. Broil for 2-3 minutes until the cheese is melted and bubbly.
  9. Serve topped with sliced jalapeños, chopped cilantro, and avocado if desired.

Notes

Feel free to use your favorite variety of barbecue sauce to customize the flavor.
This dish pairs well with a side of rice or tortilla chips for a complete meal.
For extra spice, add more jalapeños or use a spicy barbecue sauce.
