Description

This Creamy Chicken Orzo Bake is a delightful blend of tender chicken, creamy sauce, and flavorful orzo. Perfect for a quick dinner, it’s a comforting meal that brings family together, with minimal prep and maximum taste.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 casserole dish with nonstick spray. Set aside.
  2. In a bowl, whisk together the chicken broth, white wine, and cream of chicken soup until well combined. Stir in the orzo, mushrooms, and onion soup mix, then pour the mixture into the prepared casserole dish.
  3. Season the chicken breasts on both sides with garlic powder, onion powder, salt, and pepper. Layer the seasoned chicken on top of the orzo mixture, then cover the dish tightly with foil.
  4. Bake in the oven for 55 to 60 minutes, removing the foil after the first 30 minutes. Ensure the chicken is cooked through and the orzo is tender, adjusting baking time if necessary.
  5. Once done, turn off the oven and sprinkle the mozzarella and parmesan over the chicken. Return to the warm oven for 3 to 5 minutes until the cheese melts.
  6. Let the casserole rest for 5 minutes before fluffing the orzo with a fork. Garnish with additional parmesan cheese and fresh parsley if desired.

Notes

For added flavor, use homemade chicken broth.
Feel free to add vegetables like spinach or bell peppers for extra nutrition.
