Description

Creamy cilantro lime corn is a delightful side dish featuring fresh corn, buttery flavor, and zesty cilantro lime crema. Perfect for easy dinners and gatherings!


Ingredients

  • 6 ears corn, husk and silk removed
  • 4 tablespoons softened butter
  • salt and pepper, to taste
  • 1 cup cilantro lime crema
  • cilantro, to garnish
  • Tajin, to garnish
  • crumbled cotija cheese, or queso fresco, to garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Arrange the corn on a large baking sheet. Brush each ear with softened butter and sprinkle with salt and pepper.
  3. Roast the corn at 400°F for 20 minutes. For extra char, broil for the last 2 minutes, rotating the corn to avoid burning.
  4. Once done, take the corn out and spread the cilantro lime crema lavishly over it. Top with your selected toppings. Serve and enjoy!

Notes

For a bit of spice, feel free to add additional Tajin to taste.
Fresh cilantro enhances the flavor; make sure to use plenty!
If using frozen corn, adjust roasting time accordingly.
