- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, to garnish
- Tajin, to garnish
- crumbled cotija cheese, or queso fresco, to garnish
Instructions
- Preheat the oven to 400°F.
- Arrange the corn on a large baking sheet. Brush each ear with softened butter and sprinkle with salt and pepper.
- Roast the corn at 400°F for 20 minutes. For extra char, broil for the last 2 minutes, rotating the corn to avoid burning.
- Once done, take the corn out and spread the cilantro lime crema lavishly over it. Top with your selected toppings. Serve and enjoy!
Notes
For a bit of spice, feel free to add additional Tajin to taste.
Fresh cilantro enhances the flavor; make sure to use plenty!
If using frozen corn, adjust roasting time accordingly.
