Description

This Creamy Cucumber Pasta Salad stands out with its refreshing flavor and easy preparation. Loaded with rotini, crunchy cucumbers, and a creamy dressing, it’s an ideal choice for a quick lunch or a side dish at family gatherings.


Ingredients

  • 1/2 pound rotini pasta
  • 1 cucumber, thinly sliced
  • 1/2 sweet white onion, thinly sliced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp dill
  • 2 tbsp white vinegar

Instructions

  1. Cook rotini pasta to al dente as per package directions, then rinse under cold water.
  2. Cut the cucumber in half lengthwise and scoop out the seeds. Slice it thinly and set aside.
  3. Soak the thinly sliced onion in a bowl of cold water for a short while.
  4. In a small bowl, whisk together sour cream, mayonnaise, sugar, salt, dill, and white vinegar.
  5. Combine all the ingredients in a large bowl, mix well, and refrigerate for 45 minutes before serving.

Notes

For extra flavor, consider adding cherry tomatoes or bell peppers.
This salad can be made a day ahead for better flavor infusion.
