Description

Creamy Spinach Artichoke Butter Beans offer a delightful blend of flavors and textures, made with wholesome ingredients like butter beans, artichoke hearts, and fresh spinach. This dish is perfect for a quick dinner or a comforting healthy meal!


Ingredients

  • 1 tablespoon olive oil
  • 2 shallots thinly sliced
  • ½ cup canned artichoke hearts drained and roughly chopped
  • 2 cloves garlic minced
  • 28 ounces (2 cans) butter beans drained and rinsed
  • 1 ½ cups vegetable stock
  • ½ cup whole cream
  • ¼ cup grated parmesan cheese
  • 3 cups baby spinach
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley optional topping

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shallots and cook for 3 to 5 minutes until translucent.
  3. Mix in garlic and artichoke hearts; cook for 2 minutes, stirring frequently.
  4. Pour in rinsed butter beans and vegetable stock; stir and let simmer for 10 minutes.
  5. Add cream and parmesan cheese, continuing to simmer for an additional 5 minutes.
  6. Stir in baby spinach, salt, and pepper; heat until spinach wilts, then remove from heat.
  7. Mix in lemon juice and top with fresh parsley before serving.

Notes

Fresh parsley adds a nice touch, but is optional.
Serve with crusty bread for a satisfying meal.
