Description

This Crispy Fried Zucchini features a delightful crunch and savory flavor. With minimal ingredients and simple steps, it’s perfect for a quick snack or side dish.


Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten
  • oil for frying

Instructions

  1. Heat oil in a large skillet.
  2. Slice zucchini into 1/4" rounds and set aside.
  3. Whisk together panko breadcrumbs and salt in a bowl.
  4. Put flour into a shallow plate and beat eggs in another shallow bowl.
  5. Dredge each zucchini round through the flour, dip into the beaten eggs, then coat with the breadcrumb mixture.
  6. Fry the zucchini rounds until golden brown on both sides. Repeat the process until all slices are cooked.
