Ingredients

  • 1 pound dried navy beans
  • 5 cups water
  • 1 medium yellow onion, diced
  • 1/2 cup brown sugar
  • 1/3 cup molasses
  • 1/3 cup apple cider vinegar
  • 6 ounces tomato paste
  • 2 tablespoons yellow mustard
  • 1 teaspoon pepper
  • 5 strips thick cut bacon, cooked until crisp and cut into small pieces
  • 3 teaspoons salt

Instructions

  1. Rinse the dried navy beans in a colander and remove any damaged beans.
  2. In the crock pot, combine rinsed beans, water, diced onion, brown sugar, molasses, apple cider vinegar, tomato paste, yellow mustard, and pepper.
  3. Set the crock pot to high and cook for 9-10 hours. For presoaked beans, use low for 8-10 hours or high for 4-6 hours.
  4. In the last hour of cooking, stir in the cooked bacon and salt.

Notes

Ensure to rinse the beans thoroughly before cooking.
You can adjust the sweetness by varying the amount of brown sugar and molasses.
