Crumb Apple Muffins are a delightful treat, blending juicy apples with cinnamon in a moist muffin. Perfect for breakfast or a quick snack, they’re simple to whip up and sure to please everyone!

- 2 ½ cups diced apples (about 3 small/medium apples, peeled and cored)
- 2 teaspoons granulated sugar
- ½ teaspoon cinnamon
- ½ cup (62g) all-purpose flour
- ½ cup (100g) packed brown sugar
- ¼ teaspoon salt
- 3 tablespoons (42g) unsalted butter, melted
- 2 large eggs
- 1 cup (200g) granulated sugar
- ½ cup (118ml) vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup (245g) sour cream
- 2 cups (248g) all-purpose flour
Instructions
- Preheat the oven to 350°F and line muffin pans with baking cups.
- In a medium bowl, microwave diced apples with 1/2” of water for about 2 minutes until slightly translucent, then drain and sprinkle with cinnamon and sugar.
- For the topping, mix all topping ingredients in a bowl with a fork and set aside.
- In a large bowl, combine eggs, sugar, and oil; beat until creamy. Add vanilla, vinegar, baking soda, cinnamon, and salt, then mix in sour cream. Stir in flour (the batter may be lumpy) and fold in the apples.
- Fill muffin cups about 2/3 full (around 1/4 cup per muffin) and sprinkle crumble topping evenly over them.
- Bake for 15-19 minutes until a toothpick inserted comes out clean. Cool for 5 minutes in the pan before transferring to a rack to cool completely.
- Store muffins in an airtight container for up to 3 days or freeze for up to a month.
Notes
Using small/medium apples ensures good flavor; feel free to mix varieties for added depth.
For a healthier option, consider substituting half the sugar with applesauce.
