- 1 medium red onion chopped small
- 4 cloves garlic minced
- 2 jalapeño peppers seeded and chopped
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro plus more for serving

Instructions
- Warm olive oil in a small pan over medium heat.
- Sauté chopped red onion, garlic, and jalapeño peppers for 5-8 minutes, stirring frequently, then remove from heat.
- In a food processor, combine drained beans, sautéed onion/garlic/peppers, cumin, salt, lime juice, and cilantro. Process until smooth, leaving some texture if desired.
- Transfer to a serving dish and top with additional cilantro, vegan cheese, and pickled red onions if using. Serve with tortilla chips.
Notes
Adjust the salt to your taste for more flavor.
For extra heat, leave some seeds in the jalapeños or add additional peppers.
