Description

Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse together.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Pour in cold water and pulse until the mixture forms moist clumps.
  4. Transfer the dough to parchment paper, divide, flatten into discs, and wrap in plastic.
  5. Refrigerate the discs for 1 hour.
  6. Preheat oven to 400 degrees when ready to use the crust.
  7. Prepare blackberry filling by combining water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Gently stir in sugar and cornstarch and cook until the mixture thickens. Set aside.
  9. Roll out the bottom pie crust to a 12" diameter and transfer to a 9" pie plate.
  10. Spread the blackberry filling evenly in the crust, avoiding edges to ensure a good seal.
  11. Roll out the remaining crust and place it over the pie, trimming the edges as needed.
  12. Pinch or fork the edges together to seal.
  13. Whisk together the egg and water, then brush over the pie's surface.
  14. Optionally sprinkle sugar on top before cutting slits for steam to escape.
  15. Bake for 15 minutes at 400 degrees, then lower the temperature to 350 degrees and bake for an additional 45-50 minutes until the filling is bubbly and the crust is golden brown.
  16. Check the pie at 30 minutes and cover with foil if the crust is browning too quickly.
  17. Allow the pie to cool before slicing and serving.

Notes

For a sweeter pie, adjust sugar in the filling based on taste preferences.
Use fresh blackberries for the best flavor; frozen may require longer baking time.
The pie can be served warm or cold, and pairs beautifully with vanilla ice cream.
