- 7 tbsp cold water
- 1 egg + 1 tbsp water for egg wash

- 2 tsp lemon juice
- 1 tsp vanilla
- 6 cups blackberries
- 3/4 cup sugar
- 5 tbsp cornstarch
Instructions
- Combine flour, sugar, and salt in a food processor and pulse together.
- Add cold, diced butter and pulse until coarse crumbs form.
- Pour in cold water and pulse until the mixture forms moist clumps.
- Transfer the dough to parchment paper, divide, flatten into discs, and wrap in plastic.
- Refrigerate the discs for 1 hour.
- Preheat oven to 400 degrees when ready to use the crust.
- Prepare blackberry filling by combining water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
- Gently stir in sugar and cornstarch and cook until the mixture thickens. Set aside.
- Roll out the bottom pie crust to a 12" diameter and transfer to a 9" pie plate.
- Spread the blackberry filling evenly in the crust, avoiding edges to ensure a good seal.
- Roll out the remaining crust and place it over the pie, trimming the edges as needed.
- Pinch or fork the edges together to seal.
- Whisk together the egg and water, then brush over the pie's surface.
- Optionally sprinkle sugar on top before cutting slits for steam to escape.
- Bake for 15 minutes at 400 degrees, then lower the temperature to 350 degrees and bake for an additional 45-50 minutes until the filling is bubbly and the crust is golden brown.
- Check the pie at 30 minutes and cover with foil if the crust is browning too quickly.
- Allow the pie to cool before slicing and serving.
