- 2 boxes refrigerated pie crust 14.1 ounce each
- 1 can apple pie filling 20 ounce
- 1 package cream cheese, softened 8 ounce
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg separated
- 2 ½ cups powdered sugar
- ¼ cup caramel ice cream topping
- 2 tablespoons milk
Instructions
- Preheat the oven to 425 degrees F and let pie crusts come to room temperature.
- Separate the egg white from the yolk in two bowls, whisk each one separately, and set aside.
- Chop the apple slices from the apple pie filling into small bits and set them aside.
- In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract, beating until smooth and creamy.
- Roll out the pie crusts and cut circles using a 4-inch biscuit cutter; re-roll the scraps if necessary.
- Spoon half a scoop of apple pie filling and half a scoop of cheesecake filling into the center of each circle, brushing the edges with whisked egg white.
- Fold the empanadas in half, pinching the edges to seal and place on a parchment-lined baking sheet.
- Prick each empanada with a fork and brush the tops with the whisked egg yolk before baking.
- Bake the empanadas for about 15 minutes, or until they are golden brown, then cool them on a wire rack.
- Prepare the glaze by mixing powdered sugar, caramel ice cream topping, and milk to achieve your desired consistency.
- Dip each cooled empanada into the glaze and return to the lined baking sheet to set.

Ensure the pie crusts are at room temperature for easier handling.
For the glaze, adjust the milk to achieve your preferred thickness.
