Description

Enjoy this Easy Peach Cobbler (Gluten-Free, Naturally Sweetened) with its deliciously sweet peaches, a comforting crumble topping, and simple prep. Perfect for gatherings or a cozy night at home!

Ingredients

Scale
  • 8 medium-large peaches, peeled, pitted and sliced (about 56 cups)
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons maple sugar or coconut sugar (adjust sweetness to preference)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon arrowroot flour or tapioca flour
  • pinch sea salt
  • 1 1/2 cups blanched almond flour
  • 1/2 cup arrowroot flour or tapioca flour
  • 1/3 cup + 1 tablespoon maple sugar or coconut sugar
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons aluminum free baking powder
  • 1/3 cup + 2 tablespoons refined coconut oil, melted and cooled to almost room temp
  • 1/3 cup unsweetened almond milk or preferred dairy free milk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9" square, round, or 11" oval baking dish with coconut oil.
  2. Toss the sliced peaches with lemon juice, maple sugar or coconut sugar, cinnamon, arrowroot flour or tapioca flour, and sea salt to coat well. Spread the mixture evenly in the prepared baking dish and set aside.
  3. In a large bowl, mix all topping ingredients until a smooth batter forms. Let it rest for 5 minutes to thicken.
  4. Drop the batter over the peaches in 4 parts using a scoop or spoon, flattening each scoop gently without spreading it completely over the peaches.
  5. Bake in the preheated oven for about 40 minutes or until the filling is bubbly and the pastry top is browned and set.
  6. Allow the cobbler to cool at room temperature for 20-30 minutes before serving. It can be enjoyed warm or at room temperature, perhaps paired with coconut vanilla ice cream or whipped cream.

Notes

Adjust the sweetness of the filling according to your preference by varying the amount of maple or coconut sugar used.
If desired, you can substitute the almond milk with any other dairy-free milk.
Letting the cobbler cool helps the filling to set for better serving.
