Description

This Easy Salmon Piccata features succulent salmon and a delightful sauce made with lemon and capers. It’s quick to prepare, perfect for a healthy dinner or a special occasion.


Ingredients

  • 2 pounds skinless salmon, cut into chunks
  • kosher salt and pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • ⅔ cup dry white wine
  • ½ teaspoon freshly grated lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 4 tablespoons butter
  • ¼ cup capers, drained
  • lemon slices, for topping
  • chopped fresh parsley, for topping
  • jasmine rice, for serving

Instructions

  1. Season the salmon pieces with salt, pepper, and garlic powder on all sides.
  2. In a large skillet over medium heat, heat the olive oil and add the salmon. Sear for 1-2 minutes on each side until golden brown, without worrying about cooking through.
  3. After searing, pour in the wine and let it reduce to about a third of a cup. Then, add the lemon juice, butter, capers, lemon slices, and parsley, tossing the salmon gently.
  4. Simmer the mixture for another 1-2 minutes, then serve the salmon over jasmine rice, topped with extra parsley.

Notes

For added flavor, use a full-bodied dry white wine.
Feel free to adjust the lemon juice according to your taste for tartness.
Serve with a side of vegetables for a complete meal.
