Ingredients
Scale
- 2 tablespoons pistachios, toasted
- 1 small baguette, cut into 1/2" slices
- 6 slices prosciutto, cut in half lengthwise
- 6 large figs, cut into slices
- 4 ounces Gorgonzola cheese
- 2 tablespoons honey
Instructions
- Preheat the oven to 400 degrees F.
- Chop the pistachios roughly, then toast them in a sauté pan over medium heat until fragrant and lightly golden brown, stirring frequently. Set aside to cool.
- Place the baguette slices on a small baking sheet and toast in the preheated oven for 6-7 minutes until the edges are golden brown. Remove and let cool for a few minutes.
- Assemble the crostini: place a half slice of prosciutto on each toasted baguette, add 3-4 slices of fig, then top with about 1/2 tablespoon of Gorgonzola cheese. Drizzle with honey and sprinkle with toasted pistachios.
Notes
For added flavor, consider substituting honey with balsamic glaze.
Ensure the figs are ripe for optimal sweetness and texture.
Feel free to use any soft cheese as an alternative to Gorgonzola.
