Description

This Gluten Free Peach Crisp features juicy peaches and a crunchy oat topping, making it a delightful treat. Ingredients

  • 2 lbs peaches
  • 2 tablespoons granulated sugar
  • 2 tablespoons gluten free flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • ice cream or whipped cream, for serving
  • 3/4 cup certified gluten free old fashioned oats
  • 3/4 cup brown sugar
  • 1/4 cup finely ground almond flour
  • 1/4 cup sliced almonds
  • 2 tablespoons gluten free flour
  • 1 teaspoon cinnamon
  • pinch salt
  • 6 tablespoons cold butter or vegan butter, cut into 1/4" cubes

Instructions

  1. Preheat the oven to 350 degrees and spray an 8×8" baking dish with nonstick spray.
  2. Boil a large pot of water and score an 'X' on the bottom of each peach.
  3. Carefully add the peaches to the boiling water for 30 seconds or until the skins easily peel away.
  4. Remove peaches, cool, and then peel the skins off before chopping into 1/2 – 3/4" pieces to yield 4-5 cups of chopped peaches.
  5. In a large mixing bowl, combine chopped peaches with gluten free flour, granulated sugar, vanilla extract, and cinnamon, folding gently.
  6. Transfer the peach mixture to the prepared baking dish.
