- 2 lbs peaches
- 2 tablespoons granulated sugar
- 2 tablespoons gluten free flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- ice cream or whipped cream, for serving
- 3/4 cup certified gluten free old fashioned oats
- 3/4 cup brown sugar
- 1/4 cup finely ground almond flour
- 1/4 cup sliced almonds
- 2 tablespoons gluten free flour
- 1 teaspoon cinnamon
- pinch salt
- 6 tablespoons cold butter or vegan butter, cut into 1/4" cubes
Instructions
- Preheat the oven to 350 degrees and spray an 8×8" baking dish with nonstick spray.
- Boil a large pot of water and score an 'X' on the bottom of each peach.
- Carefully add the peaches to the boiling water for 30 seconds or until the skins easily peel away.
- Remove peaches, cool, and then peel the skins off before chopping into 1/2 – 3/4" pieces to yield 4-5 cups of chopped peaches.
- In a large mixing bowl, combine chopped peaches with gluten free flour, granulated sugar, vanilla extract, and cinnamon, folding gently.
- Transfer the peach mixture to the prepared baking dish.
