- 2 pounds pork tenderloin
- 3 meyer lemons
- ½ cup fruity olive oil
- 6 large cloves of garlic, minced
- 3 tablespoons oregano
- 3 teaspoons kosher salt, divided
- 1 teaspoon freshly ground black pepper
- 1 cup white rice
- 1 tablespoon butter
- 2 tablespoons italian parsley, minced
Instructions
- Trim the fat from the pork tenderloin and cut into 1-inch chunks. Place in a gallon-size freezer bag.
- Zest 2 lemons and mix the juice with olive oil in a small bowl. Add red wine vinegar, minced garlic, oregano, salt, and pepper.
- Pour the marinade over the pork in the bag and refrigerate for 2 hours, preferably overnight.
- Preheat a grill to medium-high and prepare the skewers by threading the marinated pork onto soaked wooden or metal skewers.
- Rinse the rice until the water runs mostly clear and combine with water, lemon juice, lemon zest, butter, and salt in a saucepan. Cook as directed.
- Grill the pork skewers until they reach an internal temperature of 160°F, about 10-15 minutes, then let them rest before serving with lemon rice.
Notes
For extra flavor, let the pork marinate overnight.
Serve with fresh parsley and a lemon wedge for garnish.
