Description

Savor the incredible flavors of Greek Pork Souvlaki Skewers. This recipe highlights marinated pork tenderloin grilled to perfection, balanced with zesty lemon rice—ideal for a quick dinner and healthy meals!

Ingredients

Scale
  • 2 pounds pork tenderloin
  • 3 meyer lemons
  • ½ cup fruity olive oil
  • 6 large cloves of garlic, minced
  • 3 tablespoons oregano
  • 3 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper
  • 1 cup white rice
  • 1 tablespoon butter
  • 2 tablespoons italian parsley, minced

Instructions

  1. Trim the fat from the pork tenderloin and cut into 1-inch chunks. Place in a gallon-size freezer bag.
  2. Zest 2 lemons and mix the juice with olive oil in a small bowl. Add red wine vinegar, minced garlic, oregano, salt, and pepper.
  3. Pour the marinade over the pork in the bag and refrigerate for 2 hours, preferably overnight.
  4. Preheat a grill to medium-high and prepare the skewers by threading the marinated pork onto soaked wooden or metal skewers.
  5. Rinse the rice until the water runs mostly clear and combine with water, lemon juice, lemon zest, butter, and salt in a saucepan. Cook as directed.
  6. Grill the pork skewers until they reach an internal temperature of 160°F, about 10-15 minutes, then let them rest before serving with lemon rice.

Notes

For extra flavor, let the pork marinate overnight.
Serve with fresh parsley and a lemon wedge for garnish.
Ensure wooden skewers are soaked to prevent burning on the grill.
