- 4 boneless skinless chicken breasts, about 6–8 oz each
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper, to taste, optional
- Avocado oil, or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard, or add siracha to taste for a spicy version
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- lettuce leaves, or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- hot honey for drizzling
Instructions
- Make the garlic aioli by mixing all the ingredients in a small bowl until well combined. Cover and set aside.
- Dry the chicken using paper towels. Preheat the grill to medium-high heat. In a small bowl, combine the seasonings and rub them onto the chicken breasts coated with high-heat oil.
- Grill the chicken for 4-7 minutes per side until it reaches an internal temperature of 165°F (74°C). Let it rest before assembling the sandwiches.
- Slice the brioche buns and toast them lightly on the grill while the chicken rests.
- Spread garlic aioli on the bottom half of each toasted bun and place the grilled chicken breasts on top.
- Layer avocado slices, tomato slices, lettuce leaves, and two slices of crispy bacon on each sandwich. Add pickles if desired.
- Drizzle hot honey over the sandwiches to enhance the flavor, adjusting based on your spice preference.
- Top each sandwich with the other half of the bun and serve immediately.
Notes
For an extra kick, consider adding some hot sauce to the garlic aioli.
