Description

Grilled Pesto Chicken offers an irresistible blend of fresh flavors, simple prep, and healthy ingredients. Perfect for a quick and delicious dinner at home!


Ingredients

  • ½ cup pesto
  • 2 tbsp yogurt
  • 2 tbsp mayo
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 2 garlic cloves, minced
  • ¼ tsp salt
  • 1 lb chicken breast, thin sliced or slice larger breasts in half

Instructions

  1. In a large bowl, mix together the pesto, yogurt, mayonnaise, lemon juice, water, minced garlic, and salt.
  2. Add the chicken to the marinade and toss to combine well.
  3. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours for enhanced flavor.
  4. Take the chicken out of the fridge 20-30 minutes before grilling to bring to room temperature.
  5. Preheat the grill to medium heat (around 400°F) and grill the chicken for approximately 3 minutes on each side.
  6. Remove the grilled chicken from the grill and let it rest for a few minutes before slicing.

Notes

For more flavor, marinate the chicken overnight.
Pair with grilled vegetables or a fresh salad for a complete meal.
