Ingredients
Scale
- 1 pound ground beef 85–90% lean
- 1 Tablespoon olive oil
- 3 cloves garlic minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- Pinch red pepper flakes
- 3 Tablespoons butter
- 3 Tablespoons all-purpose flour
- 2 cups whole milk room temp
- 1 cup heavy cream
- 1 ¼ cups freshly grated Parmesan NOT pre-shredded
- ½ teaspoon salt
- ¼ teaspoon black pepper or white pepper
- Pinch nutmeg
- 12 ounces fettuccine or any long pasta form
- Reserved pasta water
Instructions
- In a large pot, bring well-salted water to a boil and cook the fettuccine or long pasta. Reserve ½ cup of the pasta water before draining the pasta.
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and brown it, breaking it apart with a spoon. Incorporate the minced garlic and spices, stirring for about one minute. Drain excess fat if needed, then remove the beef from the skillet.
- In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 to 2 minutes without browning it. Gradually whisk in the milk, stirring until the mixture begins to thicken. Then, add the heavy cream and combine well. Allow it to simmer gently for 3 minutes until the sauce is thickened.
- Reduce the heat and stir in the grated Parmesan, along with salt, black pepper, and nutmeg. Mix until the sauce is smooth and silky, adding a little reserved pasta water if it's too thick.
- Introduce the cooked beef back to the sauce, adding in the drained pasta as well. Toss everything together until the pasta is well-coated and glossy.
- Adjust the consistency with reserved pasta water as needed. Serve immediately.
Notes
Use freshly grated Parmesan for the best flavor.
Feel free to substitute the fettuccine with any long pasta shape you prefer, such as linguine or spaghetti.
For extra richness, add more heavy cream to taste.
