Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 425°F and line 6 wells of a muffin tin with paper liners, skipping a well in between each.
  2. In a bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg until well mixed.
  3. Toss 1.5 cups of diced apples into the dry ingredients, coating them lightly with flour.
  4. In another bowl, mix avocado oil, brown sugar, cottage cheese, eggs, and vanilla until smooth.
  5. Fold the wet mixture into the dry ingredients until just combined, being careful not to overmix.
  6. Fill each muffin liner to the top with batter, about 4-6 tablespoons each.
  7. Combine topping brown sugar and cinnamon in a small bowl and sprinkle over the muffins. Add the reserved diced apple on top.
  8. Bake at 425°F for 5 minutes. Then, reduce the temperature to 350°F and bake for 13-18 more minutes until a toothpick comes out clean.
  9. Cool the muffins for 5-10 minutes before removing them from the tin. Repeat the process for the remaining batter.
  10. For optional glaze, mix powdered sugar and milk until smooth and drizzle over the cooled muffins.

Notes

Ensure to mix the wet ingredients well for a smooth batter.
Don’t overfill the muffin liners as they will rise considerably.
The optional glaze adds a sweet finishing touch to the muffins.
