- 1 cup unsweetened cinnamon applesauce
- 3/4 cup milk
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2 1/2 cups rolled oats
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups diced apple
Instructions
- Preheat the oven to 350°F and line a muffin tin with silicone liners or grease it.
- In a large bowl, combine the applesauce, milk, maple syrup, and vanilla extract. Mix well to combine.
- Add the rolled oats, cinnamon, nutmeg, baking powder, and salt to the wet mixture and stir until well incorporated. Fold in the diced apples.
- Using a large cookie scoop, fill each muffin tin with the batter, which will be wet. Bake for 25-28 minutes or until golden brown on top.
- Cool slightly, sprinkle with cinnamon if desired, and serve.
