- 2 cups (250g) all-purpose flour, plus more for kneading and rolling
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon finely chopped fresh rosemary
- 2/3 cup (160ml) water
- 3 tablespoons (45ml) extra-virgin olive oil, plus more for brushing on top
- flaky sea salt, for topping
Instructions
- In a large bowl, mix together the flour, sugar, salt, onion powder, garlic powder, and rosemary.
- Pour in the water and olive oil, then stir until the dough forms a clump.
- Transfer the dough to a floured surface and knead for 1-2 minutes until smooth.
- Cover the bowl with plastic wrap and let the dough rest for 10 minutes to 1 hour.
- Preheat the oven to 425°F (218°C) and prepare baking sheets with parchment paper.
- Divide the dough in half, covering one part while working with the other.
- Roll out one half of the dough on a floured surface until very thin (about 1/16 inch).
- Cut the dough into 3 x 1.5 inch rectangles and place them on the baking sheet.
- Repeat this process with the other half of the dough.
- Dock the crackers with a fork, brush with olive oil, and sprinkle with flaky sea salt.
- Bake for 9-12 minutes until golden brown, rotating the sheets halfway through.
- Let the crackers cool completely on a rack before serving.
Notes
For added variety, try using other herbs or spices in place of rosemary.
Store the crackers in an airtight container at room temperature for up to 2 days.
To refresh stale crackers, bake them at 350°F for 10 minutes.
