- 2 pounds chicken breast
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup bbq sauce
- 1/4 cup honey
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, (canned or frozen)
- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 ranch dressing
Instructions
- Cook the rice according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt, pepper, paprika, and garlic powder.
- Cook chicken in the skillet until browned and cooked through, about 7-8 minutes per side.
- Once the chicken is cooked, slice it into strips.
- In a bowl, combine BBQ sauce and honey, then mix well.
- Drizzle the honey BBQ sauce over the cooked chicken.
- Assemble the bowls with a base of rice, topped with black beans, corn, lettuce, and the sliced chicken.
- Finish with shredded cheddar cheese, pickled onions, chopped cilantro, and ranch dressing.
Notes
You can substitute chicken thighs for a richer flavor.
