Description

Experience mouthwatering Juicy Grilled Tequila Lime Marinated Chicken, made with tender chicken thighs, zesty lime juice, and spicy seasonings. Perfect for a quick dinner or healthy meal, this recipe is simple to prepare and packed with flavor for any occasion.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro (or fresh chopped)
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder (or tomato paste)
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place chicken thighs in a large resealable plastic bag or bowl.
  2. Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder, chipotle powder, salt, and pepper. Toss to coat evenly.
  3. Seal the bag or cover the bowl and marinate in the refrigerator for at least 2 hours, preferably overnight.
  4. Remove the marinated chicken from the fridge and allow it to sit at room temperature before grilling.
  5. Preheat grill to medium-high heat (375-450°F) and grease the grates.
  6. Grill chicken thighs for 4-5 minutes per side until they register 165°F.
  7. Remove chicken from the grill to a serving platter, tent with foil, and let rest for at least 10 minutes.
  8. For stovetop grilling, preheat a grill pan over medium heat, add oil, and grill the chicken for 5-7 minutes per side until cooked through.
  9. Garnish with lime wedges and cilantro before serving.

Notes

For the best flavor, marinate the chicken overnight.
Adjust the marinade seasonings to your taste—add more lime juice for tang or sugar for sweetness.
Ensure the chicken rests after grilling to keep it juicy.
