Description

These Key Lime Pie Bars offer a delightful twist on a classic dessert. With their creamy filling and buttery crust, they’re simple to make and absolutely bursting with bright, zesty flavor. Ideal for gatherings or a quick homemade treat!


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 6 tablespoons salted butter (melted)
  • 28 ounces sweetened condensed milk
  • ½ cup sour cream
  • 4 large egg yolks
  • ¾ cup key lime juice
  • ¼ teaspoon pure vanilla extract
  • 2 teaspoons lime zest (optional)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Line a 9” square baking dish with parchment paper, leaving some overhang for easy removal. Lightly grease the paper.
  3. In a bowl, mix graham cracker crumbs, granulated sugar, and ground cinnamon together.
  4. Add the melted butter and stir until combined. Press this mixture into the bottom of the prepared baking dish to form the crust.
  5. In another bowl, whisk together the sweetened condensed milk, sour cream, egg yolks, key lime juice, and vanilla extract until well blended.
  6. Pour the filling over the crust and smooth it out evenly with a spatula.
  7. Bake in the preheated oven for 15 to 20 minutes, or until the filling is set and no longer jiggles.
  8. Remove from the oven and allow to cool, then refrigerate for at least 2 hours before slicing into bars.

Notes

For a tangier flavor, consider increasing the key lime juice slightly.
You can garnish with extra lime zest or whipped cream for presentation.
These bars can be made a day in advance, allowing the flavors to deepen.
