- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons salted butter (melted)
- 28 ounces sweetened condensed milk
- ½ cup sour cream
- 4 large egg yolks
- ¾ cup key lime juice
- ¼ teaspoon pure vanilla extract
- 2 teaspoons lime zest (optional)
Instructions
- Preheat your oven to 350°F (177°C).
- Line a 9” square baking dish with parchment paper, leaving some overhang for easy removal. Lightly grease the paper.
- In a bowl, mix graham cracker crumbs, granulated sugar, and ground cinnamon together.
- Add the melted butter and stir until combined. Press this mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, whisk together the sweetened condensed milk, sour cream, egg yolks, key lime juice, and vanilla extract until well blended.
- Pour the filling over the crust and smooth it out evenly with a spatula.
- Bake in the preheated oven for 15 to 20 minutes, or until the filling is set and no longer jiggles.
- Remove from the oven and allow to cool, then refrigerate for at least 2 hours before slicing into bars.
Notes
For a tangier flavor, consider increasing the key lime juice slightly.
You can garnish with extra lime zest or whipped cream for presentation.
These bars can be made a day in advance, allowing the flavors to deepen.
