- 1 teaspoon olive oil
- 1/4 cup diced shallot
- 1 cup jasmine rice
- 1/2 teaspoon kosher salt or to taste
- 1/2 teaspoon garlic powder
- 1 1/2 cups low sodium chicken broth or vegetable broth
- zest of a lemon
- 2 tablespoons fresh lemon juice
- 1–2 tablespoons chopped fresh dill
Instructions
- Heat olive oil in a saucepan over medium-high heat.
- Add diced shallot and sauté for 30 seconds.
- Stir in jasmine rice, garlic powder, and salt; toast the mixture for an additional 30-60 seconds.
- Pour in the low sodium chicken broth and lemon zest; stir and bring to a boil.
- Once boiling, cover with a lid and turn the heat down to low. Cook for 15-20 minutes.
- Remove from heat and let the rice stand covered for 5-10 minutes.
- Remove the lid and stir in fresh lemon juice and dill. Adjust seasoning with more salt if necessary.
Notes
For a vegetarian option, use vegetable broth.
Adjust the amount of dill to taste for a stronger flavor.
