Description

This Lemon Herb Pasta Salad with Burrata combines fresh herbs, creamy burrata, and a tangy dressing for a refreshing side or light meal. It’s easy to prepare and perfect for gatherings or quick weeknight dinners!


Ingredients

  • 12 oz carbe diem rotini
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped basil
  • 8 oz burrata cheese room temperature
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice about 2 lemons
  • 1 teaspoon dijon mustard
  • 1 clove garlic grated
  • 1 tablespoon honey
  • Kosher salt to taste
  • 1/2 cup roasted unsalted pistachios
  • 1 1/2 tablespoons lemon juice about 1/2 a lemon
  • 1 garlic clove
  • 1/2 teaspoon kosher salt
  • 1/4 cup extra virgin olive oil plus more as needed
  • 1/4 cup grated parmesan cheese
  • 3/4 cup basil leaves

Instructions

  1. Cook the rotini according to the package instructions, then drain and allow it to cool.
  2. Prepare the lemon vinaigrette by whisking together all the vinaigrette ingredients in a small bowl or jar. Chill until needed.
  3. To make the pesto, pulse the pistachios in a blender or food processor until finely ground. Then add the remaining pesto ingredients and blend until smooth, adjusting consistency with olive oil or water as necessary. Taste and season with salt and pepper.
  4. In a large serving bowl, combine the cooled pasta with the fresh herbs. Drizzle half of the vinaigrette over the pasta and toss to mix. Break the burrata into pieces and place it on top of the salad. Drizzle with additional vinaigrette and add dollops of the pistachio pesto. Finish with more fresh herbs and serve cold or at room temperature.

Notes

Feel free to adjust the herbs and greens based on your preferences or what you have on hand.
The salad can be made ahead of time, just add burrata and dressing right before serving for best flavor.
This dish is perfect for picnics, potlucks, or as a light meal.
