Instructions
- Preheat the oven to 340°F.
- Grease and line the base of an 8-inch round tin with parchment paper and lightly flour the sides.
- In a bowl, mix together the granulated sugar and lemon zest.
- Cream the soft unsalted butter into the sugar mixture until light and fluffy.
- Add the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the mascarpone, fresh lemon juice, and vanilla extract.
- In another bowl, combine the all-purpose flour, baking powder, and salt, then gradually add this to the wet ingredients until just combined.
- Fold in the limoncello for extra zest.
- Pour the batter into the prepared cake tin and smooth the top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the frosting by beating together the cold mascarpone, heavy cream, powdered sugar, lemon zest, and vanilla extract until smooth and fluffy.
- Once cool, frost the cake generously and layer with lemon curd as desired.
