  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1¾ sticks butter (softened at room temperature, or 14 tablespoons)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs (at room temperature)
  • ⅓ cup heavy cream (or whole milk)
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons heavy cream (or whole milk)
  • powdered sugar or chocolate ganache

Instructions

  1. Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, whisk together the flour, cornstarch, and baking powder; set aside.
  3. Using a hand mixer, beat the softened butter until creamy, then add granulated sugar, vanilla, and salt. Beat for 2-3 minutes until fluffy and pale.
  4. Incorporate eggs one at a time, beating on high speed for 30-60 seconds after each addition.
  5. Gradually add the flour mixture and the heavy cream, alternating between the two, until smooth.
  6. Pour ⅔ of the batter into the pan and smooth the top. Mix remaining batter with cocoa, sugar, and cream, then spread over the vanilla layer. Swirl together with a knife or fork to create a marble effect.
  7. Bake at 350°F for 55-60 minutes, or until a toothpick comes out clean. Moist crumbs are fine, but no liquid batter.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar or top with chocolate ganache before serving.

Customize the marbling by adjusting the ratio of cocoa to vanilla batter as desired.
