Description

These Meal Prep Breakfast Burritos are packed with irresistible flavors and are simple to prepare, bringing together eggs, veggies, and cheese for a delightful quick meal! Perfect for anyone seeking homemade convenience and satisfaction.


Ingredients

  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook your meat of choice in a medium skillet over medium heat until fully cooked. Remove and set aside in a bowl.
  2. In the same skillet, add your selected vegetables with a pinch of salt, sautéing until soft, about 3-5 minutes.
  3. Whisk together the eggs and cottage cheese in a bowl, seasoning with a little salt and pepper. Pour this mixture into the skillet with the vegetables, cooking until the eggs are scrambled.
  4. To assemble each burrito, place one tortilla flat, adding ¾ cup of the egg mixture, 2 tablespoons of meat, and 2 tablespoons of cheese on top.
  5. Fold the sides of the tortilla in and roll it up neatly. Repeat until all filling is used.
  6. For meal prep, wrap each burrito in foil, place them on a baking sheet, and freeze until solid. Then transfer to a plastic bag or freezer-safe container for up to 2 months!
  7. Alternatively, store in the refrigerator wrapped in foil for up to 1 week.
  8. To reheat, microwave until heated through or bake at 375°F for 15-20 minutes.
