- ⅓ cup water
- 2 tablespoons cornstarch
- 2 tablespoons water
- ⅔ cup granulated sugar
- 1 teaspoon lemon juice
- 10 tablespoons Challenge Unsalted Butter
- 1 ⅔ cups all-purpose flour
- ½ teaspoon salt
- 2–3 tablespoons ice cold water
- 4 tablespoons Challenge Unsalted Butter
- ¼ cup packed brown sugar
- ½ cup all-purpose flour
Instructions
- Drain the berries well and place them in a medium saucepan with ⅓ cup of water.
- Heat over medium-low heat and cook, stirring occasionally, until some berries break down, about 3-5 minutes.
- Mix cornstarch and 2 tablespoons of water in a small bowl.
- Add sugar and lemon juice to the cooked berry mixture, stirring well.
- Stir in the cornstarch slurry until it is smooth, then add to the berry mixture.
- Stir constantly until the mixture thickens, about 1-3 minutes. It is done when it bubbles and thickens.
- Remove from heat, transfer to a bowl or jar to cool completely, and refrigerate for at least 2 hours.
Notes
Make sure to drain the berries thoroughly to prevent a watery filling.
Refrigerating the berry mixture for 2 hours enhances the flavor and texture.
