Description

These Mini Trifles are a burst of flavor with layers of fresh strawberries, blueberries, and creamy mascarpone. Perfect for gatherings, they are simple to prepare and will satisfy any sweet tooth with their delightful combination of ingredients.


Ingredients

  • 1 ½ cups unsalted butter, at room temperature
  • 3 cups granulated sugar
  • 5 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups sifted all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups whole milk, at room temperature
  • 6 cups strawberries, chopped
  • 2 ½ cups small blueberries
  • 1 cup granulated sugar
  • 16 ounces mascarpone cheese, cold
  • 2 ½ cups heavy whipping cream, cold
  • 1 ¼ cup powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 325°F and generously grease two 5×9” loaf pans. Let the butter, eggs, and milk reach room temperature.
  2. Cream together the room temperature butter and granulated sugar until light and fluffy, about several minutes.
  3. Add the eggs one at a time, ensuring each is thoroughly mixed before the next. Combine the last egg with the vanilla extract.
  4. In a separate bowl, sift the flour, measure out 3 cups, then mix in the baking powder and salt. Gradually add half of the dry mixture with half of the milk, mixing just until combined. Add the remaining ingredients and mix until fully integrated.
  5. Divide the batter equally between the loaf pans and bake for 60-70 minutes. Check for doneness using a toothpick; it should come out clean when inserted into the center. Allow the loaves to cool in the pans for at least 30 minutes before removing and cooling completely before slicing.

Notes

For best results, ensure all ingredients are at room temperature.
Adjust baking time based on your oven; some may take longer than others.
