- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce) tub cool whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust
- Watermelon slices and mint leaves for decoration (optional)
Instructions
- In a medium bowl, combine the watermelon Jell-O with ½ cup of boiling water. Stir for a minute or two until fully dissolved.
- Add in ½ cup of cold water, stirring well. Allow the mixture to sit on the counter for 10 to 15 minutes to cool slightly, but do not let it set.
- Once cooled, gently fold in the thawed Cool Whip until smooth and creamy. Carefully fold in the diced watermelon.
- Spoon the filling into the graham cracker crust, smoothing out the top.
- Refrigerate for at least 4 hours or until set and firm throughout.
- Slice and serve chilled, garnished with extra Cool Whip, fresh watermelon cubes, or mint leaves if desired.
- Store the pie covered in the fridge for up to 3 days. Avoid freezing to maintain texture.
