- 1½ pounds chicken breast
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 16 ounces orzo
- 4 cups chicken broth
- 1½ cup heavy cream
- 4 ounces cream cheese
- 1 teaspoon salt
- ¼ cup parmesan cheese
- 3 cloves garlic, minced
- 1 can quartered artichoke hearts, drained
- 8 ounces fresh spinach
Instructions
- Cut the chicken into 1-inch cubes and season with salt, pepper, and garlic powder.
- Heat a large skillet over medium-high heat. Add olive oil, then spread the chicken in a single layer in the skillet. Cook for 3-4 minutes, stir, and cook for an additional 3-4 minutes.
- Add the orzo, chicken broth, and heavy cream to the skillet. Stir well and bring to a simmer. Cook for about 10-12 minutes until the orzo is tender, stirring occasionally to prevent sticking.
- Stir in the salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking while stirring until the spinach wilts and the cheese is melted and mixed in.
- Garnish with additional parmesan and fresh cracked pepper.
