Description

This mouthwatering Parmesan Crusted Chicken features tender chicken breasts, topped with a flavorful blend of cheeses and crunchy panko breadcrumbs. It’s easy to prepare and makes for a delightful quick dinner that’s sure to impress!


Ingredients

  • 2 boneless skinless chicken breasts cut in half lengthwise
  • ¾ cup grated parmesan cheese divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small mixing bowl, combine 4 tablespoons of the melted butter with garlic powder, onion powder, salt, and pepper; brush the mixture onto each chicken breast.
  3. Cook the chicken breasts on the preheated grill pan for 3-4 minutes, flipping them halfway through.
  4. In a medium mixing bowl, combine ½ cup of grated Parmesan cheese with the provolone cheese; set aside.
  5. Top each chicken breast with the cheese mixture and cook for another 3-4 minutes until the internal temperature reaches 165°F.
  6. Transfer the chicken from the grill pan to a baking sheet lined with foil.
  7. Preheat the oven’s broiler on high.
  8. In a medium mixing bowl, mix panko breadcrumbs with the remaining ¼ cup of Parmesan cheese and the remaining 2 tablespoons of melted butter; sprinkle over the chicken breasts.
  9. Broil the chicken for 1-2 minutes or until the breadcrumbs are golden and crispy, watching carefully to avoid burning.
  10. Allow the chicken to rest for 5 minutes before serving.

For extra flavor, consider adding fresh herbs to the cheese mixture.
Ensure to monitor the broiler closely to prevent breadcrumbs from burning.
