Description

This Peach Blueberry Cobbler features juicy peaches and sweet blueberries, combined with a buttery, golden topping. It’s a delightful dessert that’s simple to make and perfect for gatherings with loved ones.


Ingredients

  • 4 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk

Instructions

  1. Combine peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt in a saucepan. Cook over medium heat for 2-3 minutes, stirring frequently until sugar dissolves.
  2. Remove the saucepan from heat and stir in the vanilla. Set aside to cool.
  3. Cut the butter into small pieces and add to a 9×13 baking dish. Place the dish in the oven while preheating to 350°F to melt the butter.
  4. In a mixing bowl, whisk together flour, 1/2 cup sugar, baking powder, salt, cinnamon, and ginger. Gradually add milk while stirring until combined.
  5. Pour the batter over the melted butter in the baking dish and smooth to an even layer.
  6. Spoon the fruit filling and its juices over the batter. Optionally sprinkle with turbinado sugar before baking.
  7. Bake in the oven for 35-40 minutes until the top is golden brown. Let cool for 5 minutes before serving, ideally with vanilla ice cream.

Notes

For extra flavor, try adding a dash of nutmeg to the fruit filling.
Serve warm for the best experience, especially with a scoop of ice cream.
Store leftovers in the refrigerator; reheat in the oven for best results.
