- 4 cups sliced peaches
- 1 1/2 cups blueberries
- 1 tablespoon fresh lemon juice
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter
- 1 cup white whole wheat flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 3/4 cup milk
Instructions
- Combine peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt in a saucepan. Cook over medium heat for 2-3 minutes, stirring frequently until sugar dissolves.
- Remove the saucepan from heat and stir in the vanilla. Set aside to cool.
- Cut the butter into small pieces and add to a 9×13 baking dish. Place the dish in the oven while preheating to 350°F to melt the butter.
- In a mixing bowl, whisk together flour, 1/2 cup sugar, baking powder, salt, cinnamon, and ginger. Gradually add milk while stirring until combined.
- Pour the batter over the melted butter in the baking dish and smooth to an even layer.
- Spoon the fruit filling and its juices over the batter. Optionally sprinkle with turbinado sugar before baking.
- Bake in the oven for 35-40 minutes until the top is golden brown. Let cool for 5 minutes before serving, ideally with vanilla ice cream.
Notes
For extra flavor, try adding a dash of nutmeg to the fruit filling.
Serve warm for the best experience, especially with a scoop of ice cream.
