- 1/2 cup white granulated sugar
- 2 tsp ground cinnamon
- 4 peaches, 1 lb cubed
- 2/3 cup brown sugar, light brown sugar packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- In a medium bowl, combine flour, baking soda, ground cinnamon, cornstarch, and salt. Mix well and set aside.
- In a large bowl, beat the room temperature butter, brown sugar, and white sugar on high speed for about 2 minutes until fluffy and pale.
- Add eggs, vanilla extract, and honey to the mixture. Mix on medium speed until fully combined. Gradually add the dry ingredients and blend on low speed until just mixed.
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Let the cookie dough rest for 10 minutes to prevent spreading.
- Using a large cookie scoop, scoop 2 oz of dough for each cookie and arrange 6 dough balls per cookie sheet.
- Bake the cookies for 12-14 minutes, or until the edges are lightly golden. After 2 minutes, press the center of each cookie with a teaspoon to create an indentation.
- Transfer the cookies to a wire rack to cool completely.
Notes
For a more pronounced peach flavor, add more cubed peaches.
Store cookies in an airtight container to keep them fresh for up to a week.
