Description
This peach cobbler features juicy, ripe peaches combined with a sweet syrup and a soft, buttery topping. Perfect for summer gatherings or a comforting dessert, it’s simple to prepare and sure to please all fruit lovers!

- 1.5 kg / 3 lb (8) yellow peaches, peeled, stone removed, cut into eight wedges
- 1/4 cup caster / superfine sugar
- 1 tsp cornflour / cornstarch
- 1 tbsp lemon juice
- 1/8 tsp salt
- 1 1/4 cups plain/all purpose flour
- 1/3 cup caster / superfine sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 85 g / 6 tbsp unsalted butter
- 1/2 cup full fat plain yoghurt (or sour cream)
- 1 tsp demerara sugar
- 1/2 tsp cinnamon powder
- Ice cream or whipped cream
Instructions
- Combine peaches and sugar in a large bowl and allow to macerate for 40 minutes.
- During maceration, preheat the oven to 210°C/410°F (200°C fan).
- After maceration, drain peaches over a colander to save the juice.
- In a separate bowl, measure out 1/4 cup of peach juice, then mix in cornflour, salt, and 1 tbsp of lemon juice.
- Pour the peaches into the syrup and toss to coat, adjusting sweetness with more sugar or lemon as desired.
- Transfer the peaches and juice into a medium baking pan and parbake for 12 minutes.
Notes
Adjust the sweetness of the peaches according to your taste, as variations in peach ripeness can affect flavor.
Serve warm with a scoop of ice cream or whipped cream for added indulgence.
For an extra twist, add a pinch of nutmeg along with cinnamon for added flavor.
