  • 5 cups peaches about 56 medium peaches, peeled and diced
  • ⅓ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¾ cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 6 tablespoons unsalted butter melted
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and line a 9-inch square baking pan with parchment paper, ensuring overhang on two sides for easy removal.
  2. In a large mixing bowl, combine the melted butter, granulated sugar, and vanilla extract, stirring until well mixed.
  3. Incorporate the flour and salt into the mixture until a soft dough forms.
  4. Press the dough evenly into the bottom of the prepared baking pan.
  5. Bake in the oven for 15 minutes, or until the edges are lightly golden.

Notes

Ensure to peel the peaches for a smoother texture, or leave the peel on for added nutrients.
For extra flavor, you can add a pinch of nutmeg along with the cinnamon.
