Description

These Peach Crumble Bars are a delightful treat featuring ripe peaches and a crumbly almond flour crust. Perfect for a quick dessert or a healthy snack, they are gluten-free and paleo-friendly, making them suitable for many diets.


Ingredients

  • 3 cups ripe peaches diced small (about 5 medium)
  • 2 tablespoons maple sugar
  • 1 tablespoon tapioca flour
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • pinch sea salt
  • 2 1/2 cups blanched almond flour
  • 1/3 cup tapioca flour
  • 1/2 cup maple sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup refined coconut oil melted and cooled slightly
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract optional

Instructions

  1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Make the peach filling by cooking the peaches, maple sugar, tapioca flour, lemon juice, vanilla, and salt in a skillet over medium heat for about 4-5 minutes until softened.
  3. Remove from heat and let the peach filling cool.
  4. In a large bowl, whisk together almond flour, tapioca flour, maple sugar, baking soda, and salt.
  5. Add melted coconut oil, egg, vanilla, and optional almond extract, stirring until a crumbly dough forms.
  6. Press about 2/3 of the mixture into the prepared baking pan to form the crust.
  7. Bake for 10-12 minutes until lightly golden.
  8. Remove the crust and let it cool for 5 minutes.
  9. Spoon the peach filling evenly over the crust.
  10. Crumble the remaining dough over the peaches in chunks.
  11. Bake for 30-35 minutes until the topping is golden brown and the peach filling is bubbling.
  12. Cool completely at room temperature, then refrigerate for 1-2 hours before slicing.

Notes

Ensure the peaches are ripe for the best flavor.
You can substitute coconut oil with ghee or butter if desired.
Store leftovers in the refrigerator for up to 3 days.
