  • 2/3 cup light brown sugar, packed

  • 1 tbsp lemon juice

Instructions

  1. Cube the peaches, peeling them if they're fresh. If using frozen peaches, thaw them first.
  2. In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Mix well.
  3. Heat the mixture until the peach juice separates and it reaches a simmer.
  4. Cook for 10 minutes, stirring occasionally until thickened. Use a potato masher to lightly mash about 20% of the peaches for texture.
  5. Cook for 1 more minute, then remove from heat. Allow to cool completely before using.
