Ingredients

Scale
  • 1 cup water
  • 1/2 cup pumpkin puree
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1 quart vegetable oil for frying
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1/4 cup milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 3 tablespoons maple syrup

Instructions

  1. Prepare the cinnamon maple cream cheese dip first.
  2. Beat together cream cheese, 1/4 cup granulated sugar, light brown sugar, milk, 1 tablespoon vanilla extract, 1 teaspoon cinnamon, and maple syrup until smooth using an electric mixer.
  3. Chill the dip in the fridge until ready to serve.
  4. In a small bowl, mix 1/2 cup granulated sugar and 2 teaspoons cinnamon for the churro coating and set it aside.
  5. Line a plate with paper towels to drain the churros later.
  6. In a large bowl, whisk together water, pumpkin puree, 2 tablespoons vegetable oil, and 1 teaspoon vanilla extract.
  7. Stir in all-purpose flour, 3 tablespoons brown sugar, 1 teaspoon cinnamon, nutmeg, and 1/2 teaspoon salt until a dough forms.
  8. Transfer the dough to a pastry bag fitted with a large star tip.
  9. Heat 1 quart of vegetable oil in a deep fryer or Dutch oven to 375°F using a candy thermometer for accuracy.
  10. Pipe 4-inch strips of dough into the hot oil, frying 3 to 4 strips at a time to prevent overcrowding.
  11. Fry churros until golden brown, about 2 minutes per side, then remove and drain on the prepared paper towels.
  12. While warm, coat the churros in the cinnamon sugar mixture until evenly covered.
  13. Serve the Pumpkin Churros warm with the chilled cream cheese dip on the side.

Notes

For extra flavor, add a pinch of cardamom to the churro mixture.
Ensure the oil is at the correct temperature for perfect frying—375°F is ideal.
These churros are best enjoyed fresh but can be reheated if necessary.
