- 1/4 cup milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 3 tablespoons maple syrup
Instructions
- Prepare the cinnamon maple cream cheese dip first.
- Beat together cream cheese, 1/4 cup granulated sugar, light brown sugar, milk, 1 tablespoon vanilla extract, 1 teaspoon cinnamon, and maple syrup until smooth using an electric mixer.
- Chill the dip in the fridge until ready to serve.
- In a small bowl, mix 1/2 cup granulated sugar and 2 teaspoons cinnamon for the churro coating and set it aside.
- Line a plate with paper towels to drain the churros later.
- In a large bowl, whisk together water, pumpkin puree, 2 tablespoons vegetable oil, and 1 teaspoon vanilla extract.
- Stir in all-purpose flour, 3 tablespoons brown sugar, 1 teaspoon cinnamon, nutmeg, and 1/2 teaspoon salt until a dough forms.
- Transfer the dough to a pastry bag fitted with a large star tip.
- Heat 1 quart of vegetable oil in a deep fryer or Dutch oven to 375°F using a candy thermometer for accuracy.
- Pipe 4-inch strips of dough into the hot oil, frying 3 to 4 strips at a time to prevent overcrowding.
- Fry churros until golden brown, about 2 minutes per side, then remove and drain on the prepared paper towels.
- While warm, coat the churros in the cinnamon sugar mixture until evenly covered.
- Serve the Pumpkin Churros warm with the chilled cream cheese dip on the side.
Notes
For extra flavor, add a pinch of cardamom to the churro mixture.
Ensure the oil is at the correct temperature for perfect frying—375°F is ideal.
These churros are best enjoyed fresh but can be reheated if necessary.
