Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups all purpose flour
  • 1/2 cup butter softened
  • 8 ounces cream cheese softened
  • 4 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fall sprinkles

Instructions

  1. In a large bowl, combine pumpkin puree, vegetable oil, granulated sugar, egg, and vanilla extract until well mixed.
  2. Stir in baking soda, pumpkin pie spice, baking powder, kosher salt, and all-purpose flour until just combined.
  3. Cover the dough and refrigerate for at least 1 hour, or up to 8 hours.
  4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a nonstick mat.
  5. Drop 2 tablespoons of batter onto the baking sheet, ensuring cookies are 2 inches apart.
  6. Bake for 10-12 minutes until tops are set and edges are lightly golden brown.
  7. After baking, let cookies sit for 5 minutes before transferring them to a cooling rack. Repeat with the remaining batter and allow cookies to cool completely.

Notes

Chilling the dough enhances the flavor and texture of the cookies.
For extra decoration, add more fall sprinkles on top of the frosting before it sets.
Make sure to soften cream cheese beforehand for easy mixing.
