- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1/3 cup pumpkin puree
- 1 ¾ cups finely ground graham cracker crumbs
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 12 ounces white chocolate chips
- extra graham cracker crumbs or english toffee bits, optional
Instructions
- In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until creamy and smooth.
- Mix in pumpkin puree and cinnamon, blending at medium speed until well combined.
- Add graham cracker crumbs, pumpkin pie spice, and cinnamon. Mix until incorporated and dough is thick.
- Transfer dough to a bowl, cover and refrigerate for about 2 hours or longer if needed.
- Prepare a baking sheet lined with parchment paper.
- Scoop a tablespoon of dough and roll into a 1-inch ball. Place on the baking sheet, spacing each about 2 inches apart. Make approximately 20 truffles.
- Chill truffles in the refrigerator for 20-25 minutes before dipping in chocolate.
- Melt white chocolate chips in a microwave-safe bowl at 100% power in 10-15 second intervals, stirring in between, until smooth.
- Use a fork to dip each truffle into the melted chocolate until fully coated. Remove and scrape off excess chocolate.
- Place the truffles back on the baking sheet using another fork to keep sides clean.
- Repeat for remaining truffles and re-dip if needed to cover any areas.
- Sprinkle English toffee bits or graham cracker crumbs on top immediately after dipping. Allow to set to a hard shell.
- Refrigerate until fully set before serving. Truffles can sit at room temperature for a few hours before serving.
