Description

This Raspberry Buckle Cake offers a delightful combination of fresh raspberries, a buttery cake, and a crumbly streusel topping, making it an irresistible treat for any occasion.

  • 1 tablespoon brown sugar
  • 1/2 cup (60g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon sea salt
  • 4 tablespoons (57g) cold butter, cut into slices
  • 2 cups (142g) raspberries
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 4 tablespoons (57g) butter, softened
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon orange zest
  • 1/2 cup (113g) whole milk, room temperature

Instructions

  1. Preheat your oven to 375ºF. Prepare a 9-inch cake pan with parchment paper and set aside.
  2. For the streusel topping, mix granulated sugar, brown sugar, flour, cinnamon, ginger, and salt in a bowl. Add cold butter and cut into the mixture until it resembles coarse crumbs. Set aside.
  3. In a different bowl, whisk together flour, baking powder, and salt for the cake batter.
  4. Beat softened butter in a separate bowl until creamy. Gradually add granulated sugar and cream together. Incorporate eggs one at a time, ensuring each is mixed in well. Scrape the bowl as necessary.
  5. Mix in vanilla and orange zest.
  6. Stir in half of the milk then half of the flour mixture, combining gently. Repeat with the remaining milk and flour until just mixed.
  7. Pour half of the batter into the prepared pan, followed by half of the raspberries. Add the remaining batter and top with the rest of the fruit.
  8. Sprinkle the streusel topping evenly over the cake.
  9. Bake for 35-45 minutes or until a toothpick comes out clean from the center.
  10. Allow the cake to cool on a wire rack for about 10 minutes before serving.

Notes

Ensure the butter is cold for the streusel to achieve the best texture.
