- 30 Oreo cookies
- 4 tablespoons unsalted butter, melted
- 3 – 8 ounce packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 1/4 cup all purpose flour
- 3 large eggs
- red gel food color
- blue gel food color
Instructions
- Preheat the oven to 325 degrees and line a 9×13 inch pan with foil.
- Crush the Oreo cookies (filling included) in a food processor until they become crumbs.
- Mix in the melted butter, then press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove and cool.
- Place a large baking sheet on the bottom rack and fill it halfway with water, then let the oven preheat again.
- In a bowl, beat together the cream cheese and sugar until creamy, then mix in the sour cream, vanilla extract, and flour.
- Add the eggs and beat gently until just combined.
- Divide the batter into three bowls. Tint two bowls with red and blue gel food colors.
- Spoon the colored batters over the crust in an alternating pattern. Use a knife to swirl the colors together gently without over mixing.
- Bake on the rack above the water-filled pan for 45-50 minutes. Immediately transfer to a wire rack and cool.
- Let the cheesecake cool on the counter for one hour, then refrigerate for 4-6 hours before slicing into squares and serving with whipped cream and sprinkles if desired.
Notes
Ensure the cream cheese is at room temperature for easier mixing.
Swirling the colors can create beautiful patterns; be careful not to overdo it as it can mix too much.
These bars can be made ahead and stored in the fridge for up to 3 days.
