Description

Enjoy these delightful Red, White, and Blue Tortilla Cups filled with creamy whipped topping and fresh berries. This easy-to-make dessert is perfect for gatherings or a quick sweet treat at home.


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • 1 cup fresh berries (blueberries, raspberries, strawberries)
  • optional: cocoa powder

Instructions

  1. Preheat the oven to 375 degrees.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, mix together the melted coconut oil and honey until well combined.
  4. Brush each side of the tortilla quarters with the coconut oil mixture, then sprinkle them with ground cinnamon.
  5. Press three tortilla triangles into a muffin pan to form cups.
  6. Bake for 15 minutes, then remove from the muffin pan and allow to cool.
  7. In a mixing bowl, combine the whipping cream, sweetener, and vanilla. Beat until small peaks form.
  8. Spoon or pipe the whipped cream into each tortilla cup.
  9. Top the whipped cream with fresh berries.
  10. If desired, sprinkle cocoa powder on top.

Notes

Adjust the sweetness of the whipped cream to your liking by adding more or less of the natural sweetener.
For a different flavor, try adding a hint of almond extract to the whipped cream.
Make sure to let the tortilla cups cool completely before filling them with whipped cream to avoid melting.
