- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, finely chopped or minced
- 1 teaspoon italian seasoning
- 1 teaspoon balsamic vinegar
- salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cherry tomatoes, olive oil, garlic, and Italian seasoning. Mix well to coat the tomatoes evenly.
- Spread the cherry tomatoes in a single layer on a cast-iron skillet or baking sheet.
- Bake in the preheated oven for about 20 minutes, or until the tomatoes have burst and are tender.
- Drizzle the roasted tomatoes with balsamic vinegar and season with salt and pepper to taste. Serve while warm.
