This Rotel Chicken Bake is a weeknight favorite! Packed with tender chicken, zesty tomatoes, and melty cheese, it’s an easy and delicious comfort meal for the whole family.

- 2 lbs boneless, skinless chicken breast
- 10 ounces rotel tomatoes with green chiles, drained
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ¾ cup shredded cheddar cheese
- freshly chopped cilantro
- freshly chopped green onions
Instructions
- Preheat the oven to 400˚F.
- Combine salt, garlic powder, cumin, and chili powder and season both sides of the chicken breasts, placing them flat in a large casserole dish.
- After draining the Rotel, spread it evenly over the chicken breasts, then top with shredded cheddar cheese.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and continue baking for an additional 5-10 minutes, until the chicken reaches an internal temperature of 165˚F.
- Garnish with freshly chopped cilantro or green onions, and serve warm.
Notes
Make sure the chicken is fully cooked to an internal temperature of 165˚F for safety.
This dish pairs well with rice or a side salad for a balanced meal.
Feel free to adjust the spice levels by adding more or less chili powder.
