Description

This Rotel Chicken Bake is a weeknight favorite! Packed with tender chicken, zesty tomatoes, and melty cheese, it’s an easy and delicious comfort meal for the whole family.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles, drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat the oven to 400˚F.
  2. Combine salt, garlic powder, cumin, and chili powder and season both sides of the chicken breasts, placing them flat in a large casserole dish.
  3. After draining the Rotel, spread it evenly over the chicken breasts, then top with shredded cheddar cheese.
  4. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and continue baking for an additional 5-10 minutes, until the chicken reaches an internal temperature of 165˚F.
  5. Garnish with freshly chopped cilantro or green onions, and serve warm.

Notes

Make sure the chicken is fully cooked to an internal temperature of 165˚F for safety.
This dish pairs well with rice or a side salad for a balanced meal.
Feel free to adjust the spice levels by adding more or less chili powder.
